Attis Bodegas y Viñedos is located in the centre of Val do Salnés, a small village located on the hillside of Mount Penaguda. The family-run winery own and cultivate 5 hectares of vines divided into small plots located between 100 and 400 metres of altitude. The soils are loam and sandy with a strong influence from the Atlantic Ocean.
Xión is produced from vines trained on pergola trellising systems of approximately 15 years of age. Grapes are manually harvested and carefully sorted before they are brought to the winery. Grapes are then de-stemmed, gently pressed, and cold soaked. Fermentation takes place with indigenous yeasts in stainless steel tanks at a controlled temperature between 12 and 15ºC. After alcoholic fermentation, the wine undergoes extended lees aging for a period of 3 months. The wine is then fined and filtered before it is bottled.
