Schiava (known as Vernatsch in Südtirol) is grown on the classic Pergula trellising system, situated on the gently warmed loamy soils of the slopes around Cortaccia. This growing area offers ideal conditions to produce wines of great quality.
At the winery, the stems are removed from the grapes and are fermented over the course of 8 days while maintaining constant temperature. The grape must is kept in contact with the skins through use of pump overs and gentle pressing. This results in ideal colour extraction from the skins while emphasizing the fruit character of the wine. The resulting wine is light in body, and ideal when served with a slight chill.
