Mylonas officially came into existance in 2000. The history of the winery stretches back to 1917 where Antonis would make his wines and leave them to ferment in amphorae. Today his grandchildren run the property, with a winemaking philosophy of capturing "The authenticity of taste and the expression of Attica through (our) wines".
The vineyards are located in Keratea, Attiki at 250-350m above sea level. The Savatiano grapes are hand-picked and placed in small crates before immediately being brought back to the winery. The grapes are cooled to 8 °C, with destemming and pre-fermentation maceration for 6 hours at 10 °C. This is followed by fermentation in temperature controlled small stainless steel tanks at of 16 °C. After fermentation, the wine is left on the lees for three months with routine stirring. Savatiano is the main grape variety used in Retsina, but this expression allows the grape to shine in its true form. This unoaked wine is delicate on the nose with floral notes but has the weight to support heavily flavoured dishes.

Savatiano is characterized by ripe green apple, lime juice, honeydew melon and lemon curd. The fruit is supported by distinct crushed shells and saline minerality with an underling fresh sage and resin. The wine is dry, rich and medium-full bodied and moderate acid.
