Once harvest is complete in the vineyard, the grapes are brought to the winery where they are carefully sorted and gently pressed. The juice is given time to settle naturally.
Alcoholic fermentation is completed in stainless steel tanks using natural yeast and temperature is controlled so as to not exceed 18 ° C.
The wine spends extended time aging on the lees aging over the course of several months to increase complexity, texture, and aroma.

Lots of tart lemon citrus fruit and crunchy green apple with delicate notes of white flowers. There is an underlying herbaceous note to the wine showing chive and chervil. A great example of the style of white wines being produced in Alto Adige.
