Fino Tradicion Bodegas
Bodegas Tradición was established in 1998, but its roots trace back to one of the oldest family owned wineries from Jerez: CZ (Cabeza de Aranda y Zarco) which was founded in 1650. Owner Joaquín Rivero decided to continue the family legacy in the sherry industry. With this, an old sherry warehouse was purchased and after a full restoration, the first casks arrived to Bodegas Tradición. Pursuing the best soleras was the main objective, as well as sourcing old top-quality American oak casks.
Their first release was 600 bottles of VORS (Very Old Rare Sherry) classified wines in 2003, which is quite remarkable considering that a young Bodega could be solely focused on older wines, in their first vintage.
Their focus is unwavering, production is small, all wines are unfined and unfiltered and numbered by hand. Their Tradición Fino is made from 100% Palomino Fino, averaging 8 years of age.
This is a wine full of a maturity, resulting from extensive aging under flor (veil of yeast) in American oak barrels using the solera and criaderas system.
