Muller Thurgau 'Caprile' Peter Zemmer
The vineyard sites for Peter Zemmer’s Müller-Thurgau grow at an elevation of 800 m on the well-arranged, terraced slopes of the Lowlands. The limestone soils, terrain, altitude, and ideal sun exposure allow for ideal yields of perfectly ripened grapes.
After harvest, the grapes are transported to the winery where stems are removed from the grapes in a pneumatic tank press.
A 6-8 hour cold maceration takes place in order to enhance the fruit characteristics of the wine. The grapes are then gently pressed and clarified through the natural settling of sediments. Alcoholic fermentation ensues in stainless steel tanks, using indigenous yeasts at a controlled temperature of 19 °C.
