Hatzidakis was founded in 1997 by Haridimos Hatzidakis and Konstantina Chryssou.

The vineyards are located in Santorini, with the majority being planted in the region of Pyrgos Kallistis where Hatzidakis is the only certified organic producer. The vines are planted at an altitude of 100-300 meters above sea level and south/ southeast facing.


Mavrotragano is a rare grape variety grown on selected vineyards sites in Pyrgos, Megalohori and Akrotiri.  Handpicked grapes are brought to the winery and destemmed followed by 5-7 days of contact with the skins.  Fermentation occurs in controlled temperatures of 22-24 °C with indigenous yeasts.  The wine is aged in French oak barrels for 18 months followed by a maturation of 12 months in stainless steel tanks before being bottled without filtration.

Taste: An expressive, densely flavoured Mavrotragano; dry, full-bodied and prominent tannins. The fruit is ripe red and black cherry, and plums. There is a dried earth note to the wine with underlying bitter chocolate, smoked meat, and camphor. The use of French oak provides subtle baking spices of cinnamon, clove and nutmeg. The wine finishes with a long, lingering length and refreshing acidity.
