The Chardonnay grapes come from the carefully selected vineyard Crivelli, located in Punggl. This is a unique vineyard where vines are grafted to slow-growing rootstock and trained on Guyot (traditional wire trellises). Chardonnay flourishes here on stony, sandy and extremely chalky soil.
The Crivelli vineyard hosts an ideal microclimate for grape growing; with temperatures fluctuating greatly between day and night. Additionally influenced by strong winds derived from Lake Favogna. The favourable location of the vineyards, ideal sunshine and good ventilation ensures excellent grape quality.
At the winery, grape stems are removed by use of a pneumatic tank press. Before being pressed, a short cold maceration takes place in order to enhance the fruit flavor profile of the wine. Afterward, the grapes are gently pressed and clarified through the natural settling of sediments. Fermentation takes place in small French oak casks and then undergoes 12 months of aging on lees. The wine is held back and aged further once bottled and not released to market until it is ready to be enjoyed.
