Pinot Grigio Riserva 'Giatl' Peter Zemmer
This highly complex expression of Pinot Grigio comes from the carefully selected “cru” vineyard of Giatl, which, in the local dialect, means “little property”. This vineyard is perfectly suited to producing world-class Pinot Grigio.
The Giatl vineyard comprises of vines grafted to slow growing rootstock and trained on Guyot (wire trellises). Pinot Grigio grapes excel here on stony, sandy and extremely chalky soil found on the valley floor around the center of Cortina. The favourable location of the vineyards, ideal sunshine, and the good ventilation ensures excellent grape quality and wines that are full of character.
Once at the winery, grape stems are removed by use of a pneumatic tank press. Before being pressed, a short cold maceration takes place. in order to enhance the fruit character of the wine. Afterward, the grapes are gently pressed and clarified through the natural settling of sediments. Fermentation takes place in small French oak casks and then undergoes 12 months of aging on lees. The wine is held back and aged further once bottled and not released to market until it is ready to be enjoyed.

The 12 months of aging in French oak casks lends itself to the wine with underlying notes of cinnamon, clove and nutmeg.
